Got Eggs?

Our neighbor decided she no longer wanted her 10 laying hens and gave
them to us. We already had 3. 13 hens = up to our ears in eggs! I
collected these today. Omelet anyone?

  1. We are getting a dozen a day from 13 hens, I know what you mean. This week I made an angle food cake, it takes 12 egg whites. It was really yummy and super easy with a kitchen aid mixer! If you like cake that's one way to use them up only 140 calories per nice sized piece!Good luck they are a lot of fun!

  2. Oooh! That sounds wonderful! We had 4 chicks, and then sadly 3 :( for almost two years now. I have made pudding (that was good!), egg noodles, quiche, and other various egg laden goodies when they were in abundance, but I have never made angel food. And I do have a Kitchen Aid mixer! Thanks for the idea!

  3. I loved having chickens. When I gardened I would gather the bugs and worms that I bumped into and feed them to the chickens....then I decided I didn't want to eat the eggs because I knew what the chickens were eating. Yeah...I'm weird like that.

  4. That's funny! I don't mind that they eat bugs, and we feed our chickens tons of kitchen scraps- bread, avocado, sweet potato skins, etc. They lay the most beautiful orange yolked and delicious eggs I have ever seen (or eaten)! Also, the 10 we just got are cooped because we can't let 13 chicks run in our neighbor's yard, but our chickens have always been free range. They wander around and eat from the yard. We had no ticks at all last year! What a life for a chicken :)

  6. Ooh I'd love to try angel food cake. I have 8 hens and I like to make egg salad sometimes . My toddler loves it and I pack sandwiches for the kids in school.

  7. We don't have space for chickens right now, but as soon as we buy our own home, space for chickens has been on my wish list for some time. There's a charity here in the UK that rescues redundant battery farm chickens (those that have stoped laying due to their treatment!) and rehomes them with families who want to keep chickens free range. They turn up practically bald from their ordeal, but within a short space of time in a good environment they go back to laying eggs and being glossy and beautiful again.
    I like to whisk eggs together with Philadelphia Light (or any other soft cheese of course!)and use it as a super quick carbonara mix on spaghetti with bacon and garlic.

  8. Hey- that is really cool! Our chickens are really livin' it up! The ones we have had since they were chicks are also very tame- they let our friends' kids pick them up, and they come when they are called. The carbonara sounds great! I'll have to give it a try.
